  • 8 oz cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons honey
  • 1/4 teaspoon paprika
  • 1/4 teaspoon turmeric
  • Pinch of salt
  • Assorted crackers (buttery Ritz, pretzel crisps, whole wheat water crackers)
  • Fresh fruit (green apple slices, red grapes, dried apricots)
  • Cured meats (prosciutto, salami, pepperoni)
  • Additional cheeses (brie, aged gouda, sharp white cheddar)
  • Halloween candy (candy corn, candy pumpkins, chocolate-covered pretzels)
  • Nuts (roasted almonds or pecans)
  • Olives (kalamata or green olives)
  • Dips (honey or fig jam)

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge 30 minutes before starting. If forgotten, microwave in 10-second bursts until soft but not melted.
  2. Divide the cream cheese: Split softened cream cheese into three equal portions in separate small bowls.
  3. Make the white layer: Leave one portion plain. Add a pinch of salt and mix well. This will be the bottom (white) layer.
  4. Make the orange layer: To the second portion, add 1/2 cup shredded cheddar, 1 tablespoon honey, paprika, and turmeric. Mix until vibrant orange. Taste and adjust.
  5. Make the yellow layer: To the third portion, add remaining 1/2 cup shredded cheddar and remaining 1 tablespoon honey. Mix well. Color should be pale yellow.
  6. Layer the cheese: Line a small loaf pan with plastic wrap. Spread white layer evenly on bottom. Gently spread yellow layer on top, then orange layer. Orange layer should be slightly thicker.
  7. Chill: Cover with plastic wrap and refrigerate for at least 2 hours, or up to overnight.
  8. Unmold and serve: Lift cheese out using plastic wrap. Place on a small plate or board. Slice into rectangles or triangles.
  9. Assemble the board: Place ramekins of olives, nuts, honey, and dips on board first.
  10. Add cheeses: Place candy corn cheese front and center. Arrange brie, gouda, and other cheeses around it.
  11. Layer meats: Fold or roll prosciutto, salami, and pepperoni into loose piles near cheeses.
  12. Fill in with fruit and crackers: Arrange apple slices, grapes, and dried apricots in clusters. Fill gaps with crackers, pretzels, and nuts.
  13. Add Halloween candy: Sprinkle candy corn, candy pumpkins, and chocolate-covered pretzels in little piles.
  14. Finish with garnishes: Add fresh rosemary sprigs or edible flowers if desired.

Notes

Room temperature ingredients are essential for smooth layers. Shred your own cheese for best texture. Chill the candy corn cheese overnight for best flavor. Don’t overcrowd the board; leave space between items. The candy corn cheese keeps in an airtight container in the fridge for up to 5 days.
