Ingredients

  • Ground beef or turkey (lean, about 1 pound / 450 g)
  • Slider buns or dinner rolls (12 pieces)

  • Yellow mustard and ketchup (to taste)
  • Salt and pepper (to season)
  • Cherry tomatoes (1 pint / 300 g)
  • Cucumber, sliced (1 large)
  • Bell peppers, assorted colors, diced (2 cups / 300 g)
  • Feta cheese cubes (1 cup / 150 g)
  • Fresh basil leaves (1/2 cup packed)
  • Olive oil (3 tbsp)
  • Balsamic vinegar (1 tbsp)
  • Button mushrooms (24 medium, stems removed)
  • Cream cheese, softened (8 oz / 225 g)
  • Jalapeños, minced (1-2 depending on heat preference)
  • Garlic, minced (2 cloves)
  • Parmesan cheese, grated (1/2 cup / 50 g)
  • Paprika and black pepper (to taste)
  • Hummus (store-bought or homemade, 1 cup)
  • Guacamole (1 cup)
  • Crackers and pita chips (for serving)

Instructions

  1. Prepare the Mini Sliders: In a large bowl, combine 1 pound (450 g) of ground beef or turkey with salt and pepper to taste. Gently mix just until combined. Form 12 small patties, about 2.5 inches (6 cm) wide.
  2. Heat a skillet or grill pan over medium-high heat. Cook patties about 3-4 minutes per side until nicely browned and cooked through. In the last minute, top each patty with a slice of cheddar cheese and cover loosely to melt.
  3. Toast slider buns lightly in the oven or on the skillet. Assemble sliders with patties, pickles, mustard, and ketchup. Keep warm wrapped in foil until serving.
  4. Make the Veggie Skewers: Thread cherry tomatoes, cucumber slices, bell peppers, feta cubes, and basil leaves alternately onto skewers. Arrange on a serving platter.
  5. Drizzle olive oil and balsamic vinegar over the skewers just before serving.
  6. Prepare Spicy Stuffed Mushrooms: Preheat oven to 375°F (190°C). Remove stems from button mushrooms and finely chop stems.
  7. In a bowl, mix softened cream cheese (8 oz / 225 g) with minced jalapeños, garlic, chopped mushroom stems, parmesan cheese, paprika, and pepper.
  8. Spoon filling into mushroom caps and place on a baking sheet.
  9. Bake for 15-18 minutes until mushrooms are tender and tops are golden.
  10. Arrange Dips and Extras: Place hummus and guacamole in small bowls, surrounded by crackers and pita chips.
  11. Sprinkle chopped herbs over dips for extra flair.
  12. Serve buffet style so guests can mix and match their favorites.
