  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 cup low-sodium beef broth or water
  • Salt and black pepper to taste
  • 2 cups dry long-grain white rice or brown rice
  • 3 cups water or low-sodium chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained (or 1 1/2 cups frozen corn, thawed)
  • 1/2 cup chopped cilantro (optional)
  • Juice of 1 lime
  • Shredded cheddar or Monterey Jack cheese (optional, for serving)
  • Sour cream or Greek yogurt (optional, for serving)
  • Fresh salsa or pico de gallo (optional, for serving)
  • Diced avocado (optional, for serving)
  • Hot sauce (optional, for serving)

Instructions

  1. Cook the Rice: In a medium saucepan, combine the 2 cups of rice, 3 cups of water (or broth), 1 tablespoon of olive oil, and 1 teaspoon of salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-18 minutes for white rice (or 40-45 minutes for brown rice), until the liquid is absorbed and the rice is tender. Remove from heat and let it sit, covered, for 5 minutes. Then, fluff with a fork and set aside to cool slightly.
  2. Brown the Beef: While the rice is cooking, heat your large skillet over medium-high heat. Add the ground beef. Cook, breaking it up with your wooden spoon, for about 5-7 minutes, until it is nicely browned all over. Do not drain the fat yet.
  3. Sautรฉ the Aromatics: Add the diced onion to the beef. Cook for 3-4 minutes, stirring occasionally, until the onion becomes translucent and soft. Add the minced garlic and cook for another minute until fragrant.
  4. Build the Taco Flavor: Push the beef mixture to one side of the pan. Add the tomato paste to the empty space and let it cook for about 30 seconds, stirring it around until it darkens slightly. Then, stir the tomato paste into the beef. Sprinkle the taco seasoning, cumin, and smoked paprika over everything. Stir well to coat.
  5. Simmer the Meat: Pour in the 1/2 cup of beef broth. Stir everything together, scraping up any browned bits from the bottom of the pan. Bring to a simmer, then reduce the heat to low and let it cook for 5-7 minutes, stirring occasionally, until the liquid has mostly evaporated and the meat is thick and saucy. Taste and adjust salt and pepper as needed.
  6. Prepare the Bean & Corn Mix: In a medium bowl, combine the drained black beans, drained corn, chopped cilantro (if using), and the juice of one lime. Stir gently to combine.
  7. Assemble the Bowls: Let the beef and rice cool for about 10-15 minutes. Grab your meal prep containers. Start with a base of rice (about 1/2 to 3/4 cup per bowl). Top with a generous scoop of the taco beef (about 1/2 cup). Add a spoonful of the bean and corn mix. Do not add any fresh toppings like cheese or sour cream yetโ€”those are best added after reheating.
  8. Cool and Freeze: Place the lids on the containers but leave them slightly ajar. Let them cool completely on the counter for about 30 minutes. This prevents condensation from forming inside the container, which causes freezer burn. Once completely cool, seal the lids tightly and place them in the freezer. They will keep for up to 3 months.

Notes

For the rice, long-grain white rice freezes and reheats the fluffiest. Brown rice works but can get drier; add a splash of water when reheating. The key to freezer success is cooking the beef until almost all liquid is evaporated to prevent ice crystals. Let bowls cool completely before sealing to avoid condensation.
