Practical and delicious breakfast burritos designed for busy mornings. These freezer-friendly meals use simple ingredients like eggs, sausage, and potatoes, allowing for quick assembly and easy reheating straight from the freezer.

  • 6 to 8 large eggs, beaten
  • 1 pound breakfast sausage, cooked and crumbled
  • 2 cups diced potatoes or frozen hash browns, cooked until crispy
  • 2 cups shredded cheddar cheese, divided
  • 1/4 cup chopped green onions
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon unsalted butter
  • 8 large flour tortillas (10-inch size)
  • Non-stick cooking spray

Instructions

  1. Heat a large skillet over medium-high heat. Add breakfast sausage and cook until browned and crumbled. If using raw diced potatoes, add them to the pan and cook until tender and crispy. Remove meat and potato mixture from the pan and drain on paper towels.
  2. Wipe out the skillet and return to medium heat. Add butter and let it melt. Pour in beaten eggs seasoned with salt and pepper. Stir gently, removing from heat when eggs are still slightly wet and undercooked.
  3. Return sausage and potato mixture to the skillet with the eggs. Add half of the shredded cheese and chopped green onions. Fold gently until cheese starts to melt. Remove from heat and let cool for 5 minutes.
  4. Lay a tortilla flat on a clean surface. Spoon a generous portion of filling (1/2 to 3/4 cup) down the center, leaving 2 inches of space at top and bottom. Sprinkle extra cheese on top. Fold sides over filling and roll tightly from the bottom.
  5. Wrap each burrito tightly in plastic wrap, then place in heavy-duty freezer bags or wrap in aluminum foil. Label with date and store in freezer for up to 3 months.
  6. To serve, remove plastic wrap and wrap burrito in a damp paper towel. Microwave on high for 90 seconds to 2 minutes. Let sit for 1 minute before eating.

Notes

Slightly undercook the eggs before freezing to prevent them from becoming rubbery after reheating. Ensure the filling is cool before assembling to prevent soggy tortillas. Use 10-inch tortillas for easier rolling. For a crispy texture, reheat in the oven at 350°F for 20-25 minutes wrapped in foil.
