This easy crockpot white chicken chili with corn is a creamy, flavorful, and hands-off meal that comes together with simple pantry ingredients. Perfect for busy weeknights, it delivers tender chicken, a velvety broth, and a touch of sweetness from corn.

  • 1.5 lbs boneless, skinless chicken thighs
  • 2 cans (15 oz each) Great Northern beans, drained and rinsed
  • 1 cup frozen corn
  • 3 cups low-sodium chicken broth
  • 2 cans (4 oz each) diced green chiles
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 4 oz cream cheese, softened
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped (plus more for garnish)

Instructions

  1. Place the chicken thighs in the bottom of a 6-quart slow cooker.
  2. Scatter the diced onion and minced garlic over the chicken.
  3. Sprinkle the ground cumin, chili powder, dried oregano, salt, and black pepper over everything. Rub the spices onto the chicken if desired.
  4. Add the drained Great Northern beans, frozen corn, and diced green chiles (with their liquid).
  5. Pour the chicken broth over the ingredients. It should mostly cover the chicken and beans.
  6. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  7. After cooking, use two forks to shred the chicken right in the pot.
  8. Mash about 1/2 cup of the cooked beans with a fork, or use an immersion blender to blend about 1 cup of the chili until smooth. Stir this back into the pot to thicken.
  9. Cut the softened cream cheese into small cubes and stir into the hot chili until fully melted and incorporated.
  10. Stir in the lime juice and chopped cilantro. Adjust salt and pepper to taste.
  11. Ladle into bowls and garnish with extra cilantro, sour cream, shredded cheese, avocado, or crushed tortilla chips.

Notes

For a thicker chili, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in during the last 15 minutes of cooking. For a spicier version, add a diced jalapeรฑo or use hot green chiles. The chili tastes even better the next day.
