Easy Crockpot Pork Chops with Apple & Onion Dinner

Tender, fall-apart pork chops cooked low and slow with sweet apples and silky onions in a savory sauce. A set-it-and-forget-it dinner that’s perfect for busy weeknights.

  • 46 boneless pork chops (about 1 inch thick)
  • 2 large apples (Honeycrisp, Fuji, or Gala), cored and sliced into 1/4-inch wedges
  • 1 large yellow onion, sliced into wedges
  • 1 cup low-sodium chicken broth
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons packed brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary, crushed
  • Salt and black pepper to taste
  • 1 tablespoon olive oil (for searing)
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (optional, for thickening)

Instructions

  1. Season the pork chops. Pat the chops dry with paper towels. Season both sides generously with salt and black pepper.
  2. Sear the chops (optional but recommended). Heat the olive oil in a large skillet over medium-high heat. Once the oil shimmers, add the pork chops in a single layer (work in batches if needed). Sear for 2-3 minutes per side until golden brown.
  3. Prep the apples and onions. While the chops sear, core and slice the apples into 1/4-inch thick wedges. Slice the onion into similar-sized wedges.
  4. Layer in the slow cooker. Place the sliced apples and onions in the bottom of the slow cooker. Nestle the seared pork chops on top, overlapping slightly if needed.
  5. Make the cooking liquid. In a small bowl or measuring cup, whisk together the chicken broth, apple cider vinegar, brown sugar, minced garlic, dried thyme, and dried rosemary. Pour this mixture over the pork chops and apples.
  6. Cook low and slow. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours until the pork is fork-tender and the apples are soft and jammy.
  7. Thicken the sauce (optional). About 15 minutes before serving, remove the pork chops to a plate and tent with foil. In a small bowl, whisk the cornstarch with cold water until smooth. Stir the slurry into the liquid in the slow cooker. Cover and cook on HIGH for 10-15 minutes until the sauce thickens slightly. Return the pork chops to the slow cooker to warm through.
  8. Taste and adjust. Give the sauce a taste. Add a pinch more salt or a splash more vinegar if needed.
  9. Serve. Spoon the apples, onions, and sauce over the pork chops. Garnish with fresh thyme or parsley if desired.

Notes

For best results, use thick pork chops (at least 1 inch). Don’t skip the sear if possible—it adds depth of flavor. Check chops at the lower end of the cook time to avoid overcooking. If sauce tastes flat, add a splash of apple cider vinegar or lemon juice.
