This Easy Crockpot Chicken Chili is a set-it-and-forget-it meal perfect for Halloween night. With simple pantry ingredients and tender chicken, it’s a crowd-pleasing, cozy dinner that lets you enjoy the festivities without stress.

  • 1.5 pounds boneless, skinless chicken breasts
  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup salsa (chipotle or chunky)
  • 1 (10-ounce) can diced tomatoes with green chiles, undrained
  • 1 cup low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • Optional toppings: shredded cheddar cheese, sour cream, diced avocado, fresh cilantro, crushed tortilla chips, pickled jalapeños

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. Add the drained and rinsed black beans and frozen corn on top of the chicken.
  3. Pour the salsa and undrained diced tomatoes with green chiles over the top.
  4. Add the chicken broth, then sprinkle chili powder, cumin, garlic powder, onion powder, and a pinch of salt and pepper over everything. Do not stir.
  5. Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until chicken reaches an internal temperature of 165°F and shreds easily.
  6. About 30 minutes before serving, remove the chicken breasts and shred with two forks.
  7. Return the shredded chicken to the pot, stir, and adjust seasoning to taste.
  8. Let the chili rest on warm for 10 to 15 minutes before serving.
  9. Ladle into bowls and serve with desired toppings.

Notes

Do not lift the lid during cooking. Use a meat thermometer to ensure chicken reaches 165°F. Shred chicken while hot for best results. For a thicker chili, mash some beans against the pot or cook uncovered for 15 minutes. This chili freezes well for up to 3 months.
