  • 1 small red onion, thinly sliced
  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 3 tablespoons fresh dill, chopped
  • 2 tablespoons white wine vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 clove garlic, minced
  • 1 teaspoon salt (plus more for salting cucumbers)
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon sugar

Instructions

  1. Wash the English cucumber and slice into thin rounds, about ⅛-inch thick. Place slices in a colander set over a bowl.
  2. Sprinkle 1 teaspoon of salt over the cucumber slices and toss gently. Let sit for 10 minutes to draw out excess moisture.
  3. While cucumbers rest, slice the red onion into thin half-moons. For milder flavor, soak in cold water for 5 minutes, then drain and pat dry.
  4. In a medium mixing bowl, combine Greek yogurt, white wine vinegar, olive oil, minced garlic, chopped dill, sugar, and ½ teaspoon black pepper. Whisk until smooth.
  5. After 10 minutes, transfer cucumber slices to a clean kitchen towel or paper towels and pat dry thoroughly.
  6. Add dried cucumber slices and sliced red onion to the bowl with the dressing. Toss gently with a spatula until evenly coated.
  7. For best flavor, refrigerate for at least 15 minutes before serving. Garnish with a sprig of fresh dill.

Notes

Salting the cucumbers is essential to prevent a watery dressing. For make-ahead, store dressing and cucumbers separately and combine just before serving. Leftovers keep in the fridge for up to 2 days.
