Easy Cranberry Brie Bites: Best Holiday Appetizer

These easy cranberry brie bites with puff pastry are the perfect holiday appetizer—flaky, creamy, and sweet-tart, ready in just 20 minutes with only four ingredients.

  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, rind removed
  • 1/3 cup whole berry cranberry sauce
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 large egg + 1 tablespoon water (for egg wash)
  • Flaky sea salt, for finishing

Instructions

  1. Preheat your oven to 400°F (200°C). Give it a full 15 minutes to come to temperature.
  2. Lightly grease your mini muffin tin with butter or non-stick spray.
  3. On a lightly floured surface, unfold your thawed puff pastry sheet. If it cracks at the fold lines, gently press the cracks back together with your fingers.
  4. Cut the pastry sheet into 24 equal squares (4 strips lengthwise and 6 strips crosswise), each about 2 inches.
  5. Gently press each square into a mini muffin cup without stretching the pastry. The corners will stick up.
  6. Cut your brie into 24 small cubes, about 1/2 inch each, after removing the rind.
  7. Place one brie cube into each pastry cup, pressing it down gently.
  8. Spoon about 1/2 teaspoon of cranberry sauce on top of each brie cube.
  9. Sprinkle a tiny pinch of chopped rosemary over each bite.
  10. In a small bowl, whisk together the egg and water to make the egg wash. Brush a thin layer over the exposed pastry edges, avoiding the bottom of the cups.
  11. Bake for 12-15 minutes, until the pastry is golden brown and puffed. Let cool in the pan for 2-3 minutes.
  12. Remove from the muffin tin and transfer to a serving platter. Sprinkle with flaky sea salt while still warm.

Notes

Keep puff pastry cold for best results. Don’t overfill cups. Let cool in pan for 2-3 minutes before removing. Can be assembled ahead and refrigerated up to 24 hours before baking. Freeze unbaked for up to 2 months.
