This Easy Cheesy Sausage Breakfast Casserole is the perfect make-ahead breakfast for holidays, gatherings, or lazy weekends. It’s simple, delicious, and always a crowd-pleaser with savory sausage, melted cheese, and fluffy eggs.

  • 8 large eggs, room temperature
  • 2 cups whole milk
  • 1 teaspoon dry mustard powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

  • 1/4 teaspoon black pepper
  • 6 cups cubed bread (stale or day-old, such as Italian loaf or sourdough)
  • 2 cups shredded cheddar cheese (sharp cheddar preferred)
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons melted butter
  • Optional: 1/4 cup chopped green onions for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Cook the sausage: In a large skillet over medium heat, cook the breakfast sausage, breaking it up with a spatula, until fully cooked and browned (about 6-8 minutes). Drain off excess grease, leaving about 1 tablespoon for moisture. Set aside to cool slightly.
  3. Cube your bread: If using fresh bread, cut into 1-inch cubes and let sit out for about 10 minutes to stale slightly. Spread the cubes evenly in the greased baking dish.
  4. Layer the sausage and cheese: Sprinkle the cooked sausage evenly over the bread cubes. Then sprinkle 1 1/2 cups of the shredded cheddar cheese and all of the mozzarella over the top. Reserve the remaining 1/2 cup cheddar for the final topping.
  5. Make the egg mixture: In a large mixing bowl, whisk together the eggs, milk, dry mustard powder, garlic powder, onion powder, salt, and pepper until smooth and slightly frothy (about 30 seconds).
  6. Pour the egg mixture slowly and evenly over the bread, sausage, and cheese layers. Gently press down on the bread with a spatula to ensure every cube gets soaked. Let it sit for 5-10 minutes (or refrigerate overnight if making ahead).
  7. Top with remaining cheese: Sprinkle the reserved 1/2 cup cheddar cheese evenly over the top. Brush the edges of any exposed bread with melted butter for a golden, crispy finish.
  8. Bake: Place the dish in the preheated oven and bake for 40-45 minutes, until the center is set (no jiggle) and the top is golden brown and bubbly. A knife inserted into the center should come out clean.
  9. Rest before serving: Let the casserole rest for 5-10 minutes before slicing. Sprinkle with chopped green onions if desired.

Notes

For best results, use day-old bread and let the assembled casserole rest for at least 5 minutes before baking. If the top browns too quickly, tent with foil for the last 10 minutes. For a make-ahead option, assemble the night before and refrigerate; add 5-10 minutes to baking time.
