A simple, no-cook charcuterie board for two that’s ready in 15 minutes. Perfect for date night at home, this board balances creamy, salty, sweet, and crunchy textures with minimal effort.

Ingredients

  • 4 ounces prosciutto, thinly sliced
  • 4 ounces salami, such as Genoa or soppressata, sliced
  • 2 ounces capicola or spicy coppa (optional)
  • 4 ounces brie, at room temperature
  • 4 ounces aged cheddar, sliced into thin pieces or small cubes
  • 2 ounces goat cheese log
  • 1/2 cup mixed olives, such as kalamata and castelvetrano
  • 1/4 cup fig jam or honey
  • 1/4 cup roasted almonds or Marcona almonds
  • 1/4 cup dried apricots or dates
  • 1 small apple or pear, sliced thin
  • 1 small bunch of red grapes, washed and dried
  • 1 small baguette, sliced into thin rounds and lightly toasted
  • 1/2 cup cornichons or pickled vegetables

Instructions

  1. Take your cheeses out of the refrigerator 30 minutes before serving.
  2. Prepare your accompaniments while the cheese warms up. Wash and dry the grapes thoroughly. Slice the apple or pear thin and toss with a squeeze of lemon juice. Arrange the dried apricots or dates in a small pile. Drain the olives well and put them in a small bowl. Toast the baguette slices lightly if using—about 5 minutes in a 350°F oven until just golden around the edges.
  3. Choose your board and start with the largest items first. Place your three cheeses on the board, spacing them out so they’re not all clustered together.
  4. Add the meats next, folding them for texture. Fold prosciutto loosely into ribbon shapes. Fold salami slices in half and then in half again to create small triangles.
  5. Fill in with the accompaniments. Place the small bowls of olives, jam or honey, and pickles in the empty spaces. Scatter the almonds, dried fruit, and fresh fruit in small clusters around the cheeses and meats.
  6. Add the crackers and bread last. Arrange the toasted baguette slices and crackers in the remaining spaces, filling any gaps.
  7. Do a final check and adjust. Step back and look at your board. Add a few extra almonds or a sprig of fresh rosemary for color if desired. Serve immediately or within an hour.

Let cheese come to room temperature for best flavor. Keep wet ingredients (olives, pickles) in small bowls to avoid soggy crackers. Fold meats for visual appeal. Customize with seasonal fruits or dietary substitutions.
