Easy Buffalo Chicken Meatballs with Creamy Blue Cheese Dip

These buffalo chicken meatballs deliver all the bold, vinegary heat and buttery finish of buffalo wings without the mess. Tender ground chicken meatballs are baked to perfection, then tossed in a homemade buffalo sauce and served with a creamy blue cheese dip.

  • 1 pound ground chicken (93% lean)
  • 1/2 cup panko breadcrumbs
  • 1/4 cup milk
  • 1 large egg, lightly beaten
  • 1/4 cup finely grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)
  • 1/2 cup hot sauce (Frank’s RedHot recommended)
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon honey
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup crumbled blue cheese
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon garlic powder
  • Pinch of salt
  • 1 tablespoon chopped fresh chives or green onion tops (for garnish)

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, panko breadcrumbs, milk, beaten egg, Parmesan cheese, minced garlic, onion powder, salt, pepper, and parsley if using. Mix gently with your hands or a fork until just combined. Do not overmix.
  3. Using a cookie scoop or your hands, form the mixture into 1.5-inch balls. You should get about 20-24 meatballs. Place them on the prepared baking sheet, spacing them about an inch apart.
  4. Bake the meatballs for 15-18 minutes, or until cooked through and the internal temperature reaches 165ยฐF (74ยฐC). The bottoms should be lightly browned and the tops just starting to turn golden.
  5. While the meatballs bake, make the buffalo sauce: In a medium saucepan over low heat, combine the hot sauce, melted butter, honey, and Worcestershire sauce. Whisk until smooth and warmed through, about 2-3 minutes. Keep on low heat.
  6. Make the creamy blue cheese dip: In a small bowl, stir together the sour cream, mayonnaise, crumbled blue cheese, lemon juice, garlic powder, and a pinch of salt. Mix until combined but leave some blue cheese chunks. Stir in the chives or green onions. Cover and refrigerate until ready to serve.
  7. Once the meatballs are done baking, transfer them to the saucepan with the buffalo sauce. Gently toss to coat each meatball evenly.
  8. Serve immediately: Arrange the saucy meatballs on a platter with the blue cheese dip on the side. Sprinkle with extra chives or crumbled blue cheese if desired. Serve with toothpicks or small forks.

Notes

Don’t overmix the meatball mixture to keep them tender. Let meatballs rest for a minute before tossing in sauce to help them hold their shape. The blue cheese dip can be made ahead of time and refrigerated; flavors improve after sitting for an hour or two. For a milder version, use mild hot sauce or mix with ketchup. For extra heat, add cayenne pepper or smoked ghost pepper sauce.
