  • ยผ cup (50g) light brown sugar, packed
  • 1 ยฝ teaspoons baking powder
  • ยฝ teaspoon baking soda

  • 1 teaspoon cinnamon
  • ยผ teaspoon salt
  • ยพ cup (170g) pumpkin puree (not pumpkin pie filling)
  • 1 large egg, room temperature
  • ยผ cup (60ml) buttermilk
  • ยผ cup (60ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup (120g) powdered sugar, sifted
  • 3 tablespoons (45ml) pure maple syrup
  • 12 tablespoons (15-30ml) milk
  • ยฝ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Lightly grease a standard 6-well donut pan with nonstick spray or butter.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt until no lumps remain.
  3. In a separate medium bowl, whisk together pumpkin puree, egg, buttermilk, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir with a rubber spatula until just combined (a few small lumps are okay). Do not overmix.
  5. Transfer batter to a piping bag or zip-top bag with the corner snipped off. Pipe batter into each donut well, filling about ยพ full.
  6. Bake for 10-12 minutes, until donuts spring back when lightly touched and a toothpick inserted into the thickest part comes out clean.
  7. Let donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. While donuts cool, make the glaze: In a small bowl, whisk together sifted powdered sugar, maple syrup, vanilla extract, and a pinch of salt. Add milk 1 tablespoon at a time until glaze is thick but pourable (like thick honey).
  9. Once donuts are completely cool, dip the top of each donut into the glaze. Let excess drip off, then place back on the wire rack. Glaze will set in 10-15 minutes.
  10. Optional: Sprinkle a pinch of cinnamon or pumpkin pie spice on top before glaze sets.

Don’t overmix the batter to avoid tough donuts. Use room temperature ingredients for best results. Ensure pumpkin puree is 100% pure, not pie filling. Glaze should be thick but pourable; adjust with milk as needed. For dairy-free, use dairy-free milk with lemon juice instead of buttermilk. For gluten-free, use a 1:1 gluten-free flour blend. Store unglazed donuts in an airtight container for up to 2 days or freeze unglazed for up to 3 months.
