  • 1 wheel of brie cheese (8 ounces)
  • 3 tablespoons honey
  • 1/3 cup walnut halves or pieces
  • 1 teaspoon fresh rosemary, finely chopped (optional)
  • Pinch of flaky sea salt
  • Crackers, sliced baguette, or apple slices for serving

Instructions

  1. Preheat your oven to 350°F (175°C). While it heats, take the brie out of the refrigerator and let it sit at room temperature for about 10 minutes.
  2. Line your baking dish with parchment paper. Place the brie wheel in the center.
  3. Score the top of the brie in a crosshatch pattern, cutting about 1/4 inch deep through the rind into the cheese.
  4. Drizzle 2 tablespoons of honey over the top, letting it pool into the scored lines and drip down the sides.
  5. Scatter the walnuts over the top and press them gently into the honey.
  6. Sprinkle the chopped rosemary over everything.
  7. Bake for 15 to 20 minutes until the brie is soft and puffed slightly but not collapsed.
  8. Remove from the oven and let rest for 2 minutes.
  9. Drizzle the remaining 1 tablespoon of honey over the top and sprinkle with flaky sea salt.
  10. Transfer to a serving board and arrange crackers, baguette slices, and apple wedges around it. Serve immediately.

Notes

Toast walnuts first for extra flavor. Do not overbake; the brie should be soft and puffed but not collapsed. Score the top to let honey seep in. Serve immediately for best texture.
