A quick and easy chocolate mug cake made with just cocoa powder, sugar, and an egg, ready in 90 seconds for a perfect solo treat.

  • 3 tablespoons granulated sugar
  • 1 large egg, beaten lightly
  • Optional: 1/4 teaspoon vanilla extract
  • Optional: pinch of salt
  • Optional: 1 tablespoon almond or oat milk (for dairy-free version)

Instructions

  1. Lightly grease the inside of a microwave-safe 12-ounce mug with butter or oil.
  2. Add 2 tablespoons of unsweetened cocoa powder and 3 tablespoons of granulated sugar to the mug. Stir briefly with a fork to combine and break up any clumps.
  3. Crack and lightly beat 1 large egg until yolk and white are blended, about 15 seconds.
  4. Pour the beaten egg into the mug with the dry mixture. Stir vigorously until the batter is smooth and uniformly chocolatey.
  5. If using, add a splash (about 1/4 teaspoon) of vanilla extract or a pinch of salt and stir again.
  6. Place the mug in the microwave and cook on high for 90 seconds. The cake should rise and spring back lightly to the touch.
  7. Carefully remove the mug and let it cool for 1-2 minutes before eating.

Notes

Adjust microwave time in 10-second increments if cake is undercooked or overcooked. Use a wider mug for even cooking. Greasing the mug helps with cleanup and texture. Optional add-ins like vanilla extract or a pinch of salt enhance flavor. For vegan version, substitute egg with flax egg.
