Easy 10-Minute Mini Caprese Lunch Box Recipe for Kids

A quick, fresh, and kid-friendly mini Caprese lunch box featuring cherry tomatoes, fresh mozzarella, basil, and a drizzle of balsamic glaze. Perfect for school lunches or snacks.

  • 1 cup cherry tomatoes (about 150g), firm and ripe
  • 1 cup fresh mozzarella balls (bocconcini) (about 125g)
  • A handful of fresh basil leaves, washed and patted dry
  • 2 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil (optional)
  • Salt and freshly ground black pepper to taste
  • Mini wooden skewers or toothpicks for assembling

Instructions

  1. Rinse 1 cup (150g) of cherry tomatoes and gently pat dry. If large, cut them in half. Place in a mixing bowl.
  2. Drizzle with 1 tablespoon extra virgin olive oil, a pinch of salt, and freshly ground black pepper. Toss gently to coat.
  3. Drain 1 cup (125g) of fresh mozzarella balls and pat dry on paper towels. Slice larger balls into bite-sized pieces if needed.
  4. Select whole, fresh basil leaves, washing and drying them carefully.
  5. Thread one cherry tomato (or half), one mozzarella ball (or piece), and a basil leaf onto each mini skewer or toothpick. Repeat until all ingredients are used.
  6. Lightly drizzle about 2 tablespoons of balsamic glaze over the assembled mini Caprese bites.
  7. Arrange the skewers neatly in a lunch box or airtight container and refrigerate until ready to serve.

Notes

Dry mozzarella and basil leaves thoroughly to avoid sogginess. Drizzle balsamic glaze just before serving if packing early to keep basil fresh. Homemade balsamic glaze can be made by simmering balsamic vinegar until syrupy.
