  • 1.5 to 2 pounds carrots, trimmed and cut into uniform pieces
  • 1 cup 100% pure pomegranate juice
  • 2 tablespoons honey
  • 2 tablespoons unsalted butter
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon fresh thyme leaves
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta cheese (optional)
  • Pomegranate arils for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Wash, trim, and cut carrots into uniform pieces.
  2. In a small saucepan, combine pomegranate juice, honey, and minced garlic. Simmer over medium heat for 5-7 minutes until reduced by half and coating the back of a spoon.
  3. Remove from heat and stir in butter, olive oil, and fresh thyme until melted and combined.
  4. Place carrots on a rimmed baking sheet. Drizzle with extra olive oil if needed, season with salt and pepper, and toss to coat. Spread in a single layer.
  5. Roast carrots for 20 minutes.
  6. Remove pan from oven. Pour the reduced glaze over the hot carrots and toss thoroughly to coat.
  7. Return to oven and roast for another 10-15 minutes until carrots are tender and glaze is sticky and caramelized.
  8. Taste and adjust seasoning. Garnish with feta and pomegranate arils if desired. Serve immediately.

Notes

Reduce the glaze properly to avoid soggy carrots. Do not overcrowd the pan to ensure roasting rather than steaming. Add the glaze halfway through cooking to prevent burning due to the sugar content. If using pomegranate molasses, use 2-3 tablespoons and adjust honey accordingly.
