  • 2 large eggs, room temperature
  • 2 egg yolks, room temperature
  • 1/3 cup all-purpose flour (40 g), sifted
  • 1 tsp pure vanilla extract (optional)
  • Pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Butter the ramekins generously and dust with cocoa powder, tapping out the excess.
  2. Melt the chocolate and butter together using a double boiler or microwave in 20-second intervals, stirring between each until smooth. Set aside to cool slightly (about 5 minutes).
  3. In a medium bowl, whisk the eggs, egg yolks, and granulated sugar until pale and thick (about 2-3 minutes) until a ribbon-like consistency forms.
  4. Gently fold the melted chocolate-butter mixture into the egg mixture in three additions, folding carefully to keep the air in.
  5. Sift the flour and salt over the batter, then fold in until just combined without overmixing.
  6. Divide the batter evenly between the prepared ramekins and place them on a baking sheet.
  7. Bake for 12-14 minutes until the edges are firm and set but the center is soft and slightly jiggly.
  8. Remove from oven and let the cakes rest for 1 minute. Run a knife around the edges to loosen and invert onto dessert plates.
  9. Dust with powdered sugar and serve immediately, optionally with vanilla ice cream or fresh berries.
