Instructions

  1. Prep the seeds: If using fresh pumpkin seeds, separate from pulp, rinse thoroughly under cold water, and pat very dry with a clean kitchen towel or paper towels. Let air-dry for 5-10 minutes if possible.
  2. Preheat air fryer to 350°F (175°C) for 3 minutes.
  3. In a medium bowl, combine dried pumpkin seeds with olive oil. Toss until coated. Add smoked paprika, garlic powder, cayenne, salt, and sugar (if using). Stir until spices are evenly distributed.
  4. Spread seasoned seeds in a single layer in the air fryer basket. Do not overcrowd; cook in batches if needed.
  5. Air fry at 350°F (175°C) for 5 minutes. Shake basket vigorously to redistribute seeds.
  6. Continue cooking for 3-5 more minutes, checking at the 3-minute mark. Seeds are done when golden brown, fragrant, and make a hollow, crisp sound when shaken. Total time: 8-10 minutes.
  7. Transfer seeds to a plate or baking sheet in a single layer. Cool completely for at least 10 minutes without touching.
  8. Taste and adjust seasoning with extra salt or cayenne if desired.
