Crispy Sweet Candy Corn Popcorn Bark

A simple, nostalgic 3-ingredient treat combining salty air-popped popcorn with creamy white chocolate and colorful candy corn for a perfect sweet and salty crunch.

  • 1/2 cup popcorn kernels
  • 12 ounces white chocolate chips (about 2 cups)
  • 1 cup candy corn
  • 1 tablespoon unsalted butter (optional)
  • Pinch of flaky sea salt (optional)

Instructions

  1. Pop the popcorn kernels using an air popper or a pot on the stove until fully popped. Let the popcorn cool completely on a large baking sheet or in a bowl. You should have about 8-10 cups of popped corn.
  2. Line an 18×13 inch baking sheet with parchment paper, ensuring it hangs over the edges for easy removal.
  3. Place the white chocolate chips (and butter, if using) in a large microwave-safe bowl. Microwave on high for 30 seconds, then stir. Continue microwaving in 15-second intervals, stirring well between each, until the chocolate is mostly melted and smooth.
  4. Pour the melted chocolate over the cooled popcorn and add the candy corn. Using a silicone spatula, gently fold the ingredients together until the popcorn is evenly coated. Be careful not to crush the kernels.
  5. Pour the mixture onto the prepared baking sheet. Spread it out into an even layer approximately 1/4 inch thick.
  6. If using, sprinkle flaky sea salt lightly over the top. Place the baking sheet in the refrigerator for at least 30 minutes, or in the freezer for 15 minutes, until the chocolate is completely hardened.
  7. Lift the parchment paper out of the pan and break the bark into irregular pieces by hand. Avoid using a knife to prevent crushing the popcorn.
  8. Store in an airtight container at room temperature for up to two weeks.

Notes

Ensure all equipment is completely dry before melting chocolate to prevent seizing. Use high-quality chocolate chips for better melting and sheen. For a dairy-free version, use vegan white chocolate chips. The bark can be frozen for up to three months.
