A simple yet sophisticated side dish featuring Brussels sprouts roasted at high heat for maximum crispiness, finished with a sticky, sweet-tart pomegranate glaze.

  • 1 lb Brussels sprouts, trimmed and halved
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon black pepper
  • 1/4 cup pomegranate juice
  • 1 tablespoon pomegranate molasses
  • 1 tablespoon honey (or maple syrup for vegan)
  • 1 clove garlic, minced
  • Pinch of red pepper flakes
  • Fresh pomegranate seeds for garnish
  • Toasted sesame seeds for garnish

Instructions

  1. Preheat oven to 425ยฐF (220ยฐC). Line two large baking sheets with parchment paper or silicone mats.
  2. Wash Brussels sprouts and pat them completely dry with a kitchen towel. Trim stems and halve them lengthwise.
  3. Place sprouts in a large bowl, drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat evenly.
  4. Spread sprouts in a single layer on baking sheets, ensuring they are not touching to allow for proper roasting.
  5. Roast for 20 minutes, then flip sprouts and roast for another 5-10 minutes until tender and crispy.
  6. While sprouts roast, combine pomegranate juice, pomegranate molasses, honey, minced garlic, and red pepper flakes in a small saucepan.
  7. Simmer the glaze over medium heat for 3-4 minutes until it reduces by half and becomes syrupy.
  8. Return roasted sprouts to the oven for the final 5 minutes. Brush generously with the glaze halfway through.
  9. Remove from oven and immediately sprinkle with fresh pomegranate seeds and toasted sesame seeds. Serve hot.

Notes

Ensure sprouts are completely dry before roasting to prevent steaming. Do not overcrowd the pan. Apply glaze in the last 5-7 minutes to prevent burning. For leftovers, reheat in an air fryer or oven at 400ยฐF to recrisp.
