  • 4 cloves garlic, minced

  • 1/4 cup all-purpose flour
  • 2 large eggs, at room temperature
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat the chicken dry with paper towels to remove as much moisture as possible.
  2. Season the chicken cubes with salt, pepper, and half the Italian seasoning. Toss to coat evenly and let sit for 5 minutes.
  3. Set up three shallow bowls: first with flour, second with beaten eggs and a splash of water, third with grated Parmesan, remaining Italian seasoning, and paprika. Mix the third bowl with a fork.
  4. Working in batches, dredge chicken cubes in flour, shaking off excess. Dip in egg wash, letting excess drip off. Press into Parmesan mixture until fully coated. Place on a clean plate. Repeat with all chicken.
  5. Heat a large skillet over medium heat. Add butter and let it melt and foam. Add minced garlic and cook for about 30 seconds until fragrant.
  6. Place breaded chicken cubes in the skillet in a single layer without overcrowding. Cook undisturbed for 3-4 minutes until deep golden brown. Flip each piece and cook another 3-4 minutes on the other side.
  7. Transfer cooked chicken bites to a wire rack set over a baking sheet to prevent steaming.
  8. Once all chicken is cooked, place the baking sheet under the broiler for 1-2 minutes, watching closely, until the crust darkens slightly and becomes crunchier.
  9. Let the chicken bites rest on the wire rack for 2 minutes before serving.
  10. Sprinkle with fresh parsley and serve immediately with lemon wedges on the side.
