These crispy mini pepperoni pizza bagels are an easy, freezer-friendly snack with perfectly toasted bagels, gooey cheese, and savory pepperoni. They make a quick and delicious treat for any occasion.

  • Mini bagels (plain or everything, preferably plain)
  • 1 cup (8 fl oz) tomato sauce or marinara sauce
  • 1 ½ cups (5.3 oz) shredded whole-milk mozzarella cheese
  • ¼ cup (0.9 oz) finely grated Parmesan cheese
  • About 30 small pepperoni slices or 15 regular slices halved
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano (optional)
  • ½ teaspoon garlic powder (optional)
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or use a non-stick pan.
  2. Slice the mini bagels in half horizontally and lay them cut-side up on the baking sheet.
  3. Brush the cut sides lightly with olive oil to help them crisp up.
  4. Toast the bagels in the oven for 5-7 minutes until edges turn golden and firm.
  5. Remove the bagels from the oven and spread about 1 tablespoon of tomato sauce evenly on each half.
  6. Toss mozzarella and Parmesan cheese with oregano and garlic powder if using, then sprinkle evenly over the sauce.
  7. Top each mini pizza with 2-3 slices of pepperoni, optionally folding slices slightly for crispy edges.
  8. Bake at 400°F (200°C) for 10-12 minutes until cheese is bubbly and golden with some brown spots.
  9. Remove from oven and let cool for a few minutes. Garnish with fresh basil leaves if desired.
  10. Serve warm or let cool completely before freezing extras in a single layer on a tray. Once frozen, transfer to a resealable bag for up to 3 months.

Notes

Pre-toast the bagels to lock in crunch and prevent soggy bottoms. Brush lightly with olive oil instead of butter to avoid burning. If cheese browns too quickly, tent loosely with foil after 8 minutes. Avoid stacking bagels right after baking to keep crisp texture. For freezing, freeze in a single layer before transferring to a sealed bag.
