  • 1 tsp salt (for boiling water)
  • 1 bowl ice water
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup low-sodium chicken broth
  • 1 cup sharp cheddar cheese, shredded
  • 1 tsp Dijon mustard
  • 1/2 tsp salt (for sauce)
  • Black pepper to taste
  • 2 cups crispy fried onions
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a rolling boil. Trim the ends off the green beans and cook them for 3-4 minutes until bright green and crisp-tender.
  2. Prepare a bowl of ice water. Transfer the blanched beans immediately to the ice bath for 2 minutes to stop cooking, then drain and pat dry thoroughly.
  3. In a Dutch oven or large skillet, melt butter over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
  4. Sprinkle flour over the butter and whisk constantly for 1-2 minutes until the mixture is a light blonde color.
  5. Slowly whisk in chicken broth, then add heavy cream. Cook until the mixture thickens slightly, about 2-3 minutes.
  6. Stir in Dijon mustard, salt, and pepper. Remove from heat and stir in shredded cheddar cheese until melted and smooth.
  7. Preheat oven to 375°F (190°C). Fold the blanched green beans into the cheese sauce until coated.
  8. Pour the mixture into a greased 9×13 inch baking dish. Sprinkle crispy fried onions evenly over the top.
  9. Bake for 15-20 minutes until the sauce is bubbly and onions are golden brown.
  10. Let sit for 5 minutes before serving. Garnish with fresh chopped parsley.

Notes

Do not skip the ice bath to keep beans vibrant and crisp. Shred your own cheese for a smooth sauce. Pat beans dry to prevent a watery sauce. Add onions only at the end to maintain crunch. This recipe is not suitable for freezing.
