A satisfying autumn salad featuring pan-seared Honeycrisp apples, toasted walnuts, and a tangy blue cheese and apple cider vinaigrette, ready in under 20 minutes.

Ingredients

  • 4 cups arugula, washed and dried
  • 2 large Honeycrisp or Fuji apples, cored and sliced thin
  • ½ cup blue cheese (Gorgonzola or Roquefort), crumbled
  • ½ cup walnuts, toasted and chopped
  • ¼ cup dried cranberries
  • ¼ cup feta cheese, crumbled
  • ¼ cup red onion, thinly sliced
  • 10 fresh sage leaves
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • ½ cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash arugula thoroughly and spin dry. Set aside in a large bowl.
  2. Core apples and slice into thin wedges. Soak in cold water for 5 minutes to prevent browning, then drain well.
  3. Heat a skillet over medium heat. Add walnuts and toast for 3-5 minutes, stirring often, until fragrant. Remove and chop roughly.
  4. In the same skillet, add a little oil and fry sage leaves for 30 seconds per side until crisp. Remove and drain on paper towels.
  5. Add a bit more oil to the skillet. Sear apple slices for 2 minutes per side until golden but still crisp. Remove and let cool slightly.
  6. In a small bowl, whisk vinegar, honey, mustard, salt, and pepper. Slowly drizzle in olive oil while whisking until emulsified.
  7. Toss greens with half the dressing. Add apples, walnuts, cranberries, onions, and cheeses. Toss gently. Add more dressing if needed. Top with fried sage.
  8. Serve immediately.

Notes

Do not dress the salad too early as the acid will wilt the greens. If meal prepping, keep the dressing separate. For a vegan version, swap cheeses for nutritional yeast or vegan alternatives. Soak red onions in cold water to mellow the bite.
