  • ยฝ cup (113g) Unsalted Butter, softened to room temperature
  • ยฝ cup (100g) Granulated Sugar
  • 1 teaspoon Cream of Tartar
  • ยฝ teaspoon Baking Soda
  • 2 large Egg Whites, room temperature
  • 1 teaspoon Vanilla Extract
  • 1 to 2 teaspoons Peppermint Extract
  • ยผ teaspoon Salt
  • 1 cup (170g) Dark Chocolate Chips
  • ยผ cup (60ml) Heavy Cream
  • ยฝ teaspoon Peppermint Extract (for filling)
  • White Chocolate Chips (optional, for dipping)

Instructions

  1. In a medium bowl, whisk together the flour, cornstarch, baking soda, cream of tartar, and salt. Set aside.
  2. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy (about 2-3 minutes).
  3. Add the egg whites, vanilla extract, and peppermint extract to the butter mixture. Beat on medium speed until combined.
  4. Gradually add the dry ingredients to the wet ingredients. Mix on low speed until just combined. Do not overmix.
  5. Cover the bowl with plastic wrap and refrigerate the dough for at least 1 hour, or up to 24 hours.
  6. Preheat oven to 350ยฐF (175ยฐC). Line two baking sheets with parchment paper.
  7. Portion the dough into balls and place on baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes. The cookies should look pale and dry to the touch, not browned.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. To make the filling, heat heavy cream until it just begins to simmer. Pour over dark chocolate chips and let sit for 1 minute, then stir until smooth.
  11. Stir in ยฝ teaspoon peppermint extract. Chill if a thicker consistency is desired.
  12. Spread a generous amount of ganache on the flat side of one cookie and place another cookie on top to form a sandwich.
  13. Optional: Dip the edge of the sandwich into melted white chocolate.
  14. Let assembled cookies sit at room temperature for 30 minutes or in the fridge for 15 minutes to firm up.

Notes

Measure flour correctly by spooning it into the cup and leveling it off. Ensure butter is softened but not melted. Chilling the dough is essential for crispness. Store in an airtight container with a piece of bread to maintain crispness in humid climates.
