This crispy balsamic roasted delicata squash is a simple, elegant side dish with caramelized edges and a sweet-tangy glaze. Ready in 30 minutes, it’s perfect for weeknight dinners or holiday feasts.

  • 2 medium delicata squash (about 1.5 pounds total)
  • 2 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt (Diamond Crystal; reduce to ½ teaspoon if using table salt)
  • ½ teaspoon black pepper, freshly ground
  • ½ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish, optional)
  • ¼ cup crumbled feta cheese (for garnish, optional)
  • ¼ cup pomegranate seeds (for garnish, optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Place the oven rack in the middle position. Line a large baking sheet with parchment paper.
  2. Wash the delicata squash thoroughly under cool water and pat it dry. Cut off the stem end and the tip (about ¼ inch from each end). Slice the squash in half lengthwise. Use a spoon to scoop out the seeds and stringy pulp.
  3. Place each half cut-side down on the cutting board. Slice crosswise into ½-inch thick half-moons.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, maple syrup, minced garlic, salt, pepper, dried thyme, and red pepper flakes if using.
  5. Place the squash slices in a large mixing bowl. Pour the balsamic mixture over them and toss gently until every slice is evenly coated.
  6. Spread the squash slices in a single layer on the prepared baking sheet. Do not overlap.
  7. Roast for 15 minutes without disturbing.
  8. Remove the pan from the oven. Flip each slice over. Return the pan to the oven and roast for another 10-15 minutes, until the edges are deeply caramelized and crispy, and the flesh is tender when pierced with a fork.
  9. Optional: For extra crispiness, switch the oven to broil for the last 1-2 minutes, watching closely to prevent burning.
  10. Let the squash cool on the pan for 2-3 minutes. Transfer to a serving platter and sprinkle with fresh parsley, crumbled feta, and pomegranate seeds if using.

Notes

Do not skip flipping the squash halfway through for even caramelization. Watch the garlic to prevent burning; add halfway through if concerned. For extra saucy squash, simmer ½ cup balsamic vinegar until reduced by half and drizzle over before serving. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a 400°F oven for 5-7 minutes or in an air fryer at 375°F for 3-4 minutes; avoid microwaving. Freezing is not recommended.
