Instructions

  1. Preheat your oven to 450ยฐF (232ยฐC). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Wash the cauliflower and cut into bite-sized florets (1 to 1.5 inches). Pat them dry thoroughly with a clean towel.
  3. In a large bowl, whisk together the flour, cornstarch, garlic powder, onion powder, smoked paprika, cayenne (if using), salt, and black pepper.
  4. In a separate medium bowl, pour in the buttermilk. Slowly add the dry mixture to the buttermilk, whisking constantly, until you have a smooth, thick batter (like pancake batter).
  5. Add the dried cauliflower florets to the batter. Gently toss until every floret is evenly coated. Let them sit for about 2 minutes.
  6. Using tongs, lift each floret out of the batter, letting excess drip off, and place on the prepared baking sheet. Leave space between each piece.
  7. Bake for 20 minutes: bake for 10 minutes, then carefully flip each floret using tongs, and bake for another 10 minutes until golden brown and crispy.
  8. While the cauliflower bakes, combine the buffalo wing sauce and melted butter in a small bowl. Stir in honey if using. Microwave for 20 seconds or until warm, then whisk until smooth.
  9. Once the cauliflower is done, transfer the hot florets to a large bowl. Pour the buffalo sauce over the top and gently toss until every piece is coated.
  10. Serve immediately with ranch or blue cheese dressing, celery sticks, and carrot sticks on the side.
