A simple, addictive 3-ingredient snack featuring firm sweet potato cubes wrapped in thick-cut bacon and baked until crispy. Perfect for game day or as a quick appetizer.

  • 2 medium sweet potatoes (firm, peeled, cut into 1-inch cubes)
  • 8–10 strips thick-cut bacon (cut in half crosswise)
  • Freshly cracked black pepper (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes completely, then cut them into uniform 1-inch cubes.
  3. Cut the bacon strips in half crosswise to create pieces roughly the same length as the potato cubes.
  4. Wrap one half-strip of bacon snugly around each sweet potato cube.
  5. Arrange the wrapped bites on a rimmed baking sheet lined with parchment paper or foil, leaving space between them.
  6. Bake for 15-20 minutes, checking at the 10-minute mark. Flip if desired for even browning.
  7. Remove from the oven when the bacon is crispy and potatoes are tender. Let cool for 2-3 minutes before serving.

Notes

Use thick-cut bacon to prevent burning before the potato cooks. Ensure potato cubes are uniform in size for even cooking. Do not overcrowd the pan to allow air circulation for crispy bacon. If using low-sodium bacon, add a pinch of sea salt.
