  • 12 medium-sized fresh jalapeños
  • 8 oz cream cheese, softened
  • ½ cup shredded sharp cheddar cheese
  • 12 slices regular-cut bacon
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 tablespoon fresh parsley, finely chopped (or 1 teaspoon dried)
  • 1 teaspoon fresh dill, finely chopped (or ½ teaspoon dried)
  • ½ teaspoon garlic powder (for dip)
  • ½ teaspoon onion powder (for dip)
  • Salt and pepper to taste (for dip)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil. Place a wire rack on the sheet if available.
  2. Wear gloves and slice each jalapeño in half lengthwise. Scoop out seeds and membranes to desired spice level. Set halves on paper towels to dry.
  3. In a medium bowl, mix softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and pepper until smooth.
  4. Fill each jalapeño half generously with the cheese mixture using a spoon or small scoop.
  5. Wrap each stuffed jalapeño half with a slice of bacon, cutting bacon in half if needed. Secure with toothpicks if necessary.
  6. Place poppers on the wire rack or directly on the lined baking sheet, spacing evenly. Bake for 20-25 minutes until bacon is crispy and cheese is bubbly. Flip halfway if no wire rack is used.
  7. While baking, whisk together sour cream, mayonnaise, parsley, dill, garlic powder, onion powder, salt, and pepper for the ranch dip. Chill until serving.
  8. Let poppers rest for 5 minutes after baking. Serve warm with creamy ranch dip.

Notes

Use gloves when handling jalapeños to avoid skin irritation. Dry jalapeños before wrapping to help bacon crisp. Wrap bacon tightly and secure with toothpicks if needed. Broil for last 2 minutes if bacon isn’t crispy enough. Can substitute turkey bacon and dairy-free cream cheese for a lighter or dairy-free version. Avoid microwaving leftovers to keep bacon crispy; reheat in oven instead.
