Ingredients

Scale
  • 1 lb chicken tenders (boneless, skinless thighs can be used)
  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • Cooking spray or light brush of oil for air fryer basket
  • ½ cup hot sauce (Frank’s RedHot recommended)
  • 4 tbsp unsalted butter, melted
  • 1 tbsp honey (optional)
  • 2 cups shredded green cabbage
  • 1 cup shredded carrots
  • ¼ cup mayonnaise
  • 2 tbsp crumbled blue cheese
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • 8 slider buns, split and lightly toasted
  • Optional: sliced pickles or celery leaves for garnish

Instructions

  1. Pat dry the chicken tenders with paper towels. Season the flour with garlic powder, smoked paprika, salt, and pepper in one bowl.
  2. Set up dredging station with flour mixture in one shallow bowl, beaten eggs in another, and panko breadcrumbs in a third. Dip each tender first into the flour, shaking off excess, then the egg, and finally coat evenly with panko.
  3. Preheat air fryer to 400°F (200°C) for 3 minutes. Lightly spray or brush the basket with oil. Arrange tenders in a single layer without overcrowding.
  4. Cook chicken for 8 minutes, flip, then cook an additional 6-7 minutes until golden and crispy. Ensure internal temperature reaches 165°F (74°C).
  5. While chicken cooks, whisk together hot sauce, melted butter, and honey in a small bowl.
  6. Transfer cooked chicken to a large bowl. Pour buffalo sauce over chicken and toss gently to coat evenly.
  7. In a medium bowl, combine shredded cabbage and carrots. In a separate small bowl, whisk mayonnaise, blue cheese, apple cider vinegar, Dijon mustard, salt, and pepper. Pour dressing over veggies and toss until coated.
  8. Toast slider buns lightly. Layer each bun with buffalo chicken tender, a generous scoop of blue cheese slaw, and optional pickles or celery leaves. Serve immediately.

Notes

Do not overcrowd the air fryer basket to maintain crispiness. Pat chicken dry before breading. Flip chicken halfway through cooking. Toss chicken in buffalo sauce immediately after air frying to keep coating crisp. Make slaw ahead for better flavor melding. Use gluten-free flour and breadcrumbs for gluten-free version. Substitute blue cheese and mayo with vegan alternatives for dairy-free slaw.
