  • 1/2 cup (120 g) sour cream or Greek yogurt (use dairy-free yogurt for vegan option)
  • 1 teaspoon lemon juice
  • 1 tablespoon finely chopped fresh chives (optional, for garnish)

Instructions

  1. Wash and cut 1 medium head of cauliflower into bite-sized florets, about 1 to 1.5 inches. Pat dry with paper towels to remove excess moisture.
  2. In a large mixing bowl, whisk together chickpea flour, garlic powder, paprika, salt, and black pepper. Gradually add water, whisking continuously until a smooth, thick batter forms with no lumps.
  3. Toss the cauliflower florets into the batter, stirring gently to coat each piece evenly. Let sit for 5 minutes so the batter adheres well.
  4. Preheat the air fryer to 400°F (200°C) for 3 minutes. Arrange the florets in a single layer in the basket, avoiding overcrowding. Lightly spray with olive oil.
  5. Cook for 15 minutes, shaking the basket halfway through to brown evenly. If needed, cook 2-3 minutes longer for extra crispiness.
  6. While cauliflower cooks, warm buffalo sauce in a small saucepan over low heat or microwave for 30 seconds.
  7. Transfer cooked cauliflower to a large bowl. Pour warm buffalo sauce over and toss gently until each piece is coated evenly.
