  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes in oil, drained and chopped
  • 3 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 12 ounces dried pasta (fettuccine, pappardelle, penne, or rigatoni)
  • 3 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil or parsley, chopped (for garnish)
  • Extra Parmesan cheese (for garnish)

Instructions

  1. Pat the chicken pieces dry with paper towels. Season generously with salt, pepper, garlic powder, and Italian seasoning. Toss to coat evenly.
  2. Heat olive oil in a large pot over medium-high heat. Once shimmering, add chicken in a single layer (work in batches if needed). Cook undisturbed for 4-5 minutes until golden brown, then flip and cook another 3-4 minutes. Transfer chicken to a plate and set aside.
  3. Reduce heat to medium. Add butter to the same pot. Once melted, scrape up browned bits from the bottom. Add minced garlic and cook for about 30 seconds until fragrant, stirring constantly.
  4. Add chopped sun-dried tomatoes and cook for 1-2 minutes until softened.
  5. Pour in chicken broth and heavy cream. Stir, scraping the bottom of the pot. Bring to a gentle boil.
  6. Add dried pasta, pushing it down to submerge. Reduce heat to a simmer, cover, and cook for 2 minutes less than package directions (e.g., if pasta says 10 minutes, cook for 8). Stir occasionally to prevent sticking.
  7. Remove lid. Stir in fresh spinach until wilted. Return seared chicken and any accumulated juices to the pot.
  8. Sprinkle in grated Parmesan cheese and red pepper flakes (if using). Stir until cheese melts and sauce thickens. Taste and adjust salt and pepper.
  9. Let rest off heat for 2-3 minutes. Garnish with fresh basil or parsley and extra Parmesan. Serve immediately.

Notes

For best results, use freshly grated Parmesan and full-fat heavy cream. The pasta continues to cook after turning off the heat, so undercook slightly. If sauce is too thin, simmer uncovered; if too thick, add a splash of warm broth or milk. Leftovers keep for up to 3 days in the refrigerator and can be frozen for up to 3 months.
