  • 1 round loaf of dark bread (pumpernickel or rye), about 8-9 inches in diameter
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 (10 oz) package frozen chopped spinach, thawed and drained
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 (8 oz) can water chestnuts, drained and finely chopped
  • 3–4 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 pretzel rod
  • Fresh herbs for garnish (optional), such as rosemary or thyme

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Using a serrated knife, cut a circle out of the top of the bread loaf, about 2 inches from the edge, to create a lid. Set lid aside.
  2. Hollow out the bread loaf by pulling out the soft interior, leaving a wall about 1 to 1.5 inches thick. Tear the bread scraps into bite-sized pieces and place on a baking sheet.
  3. Drizzle bread scraps and lid with olive oil and a pinch of salt. Toss to coat and spread in a single layer. Bake for 8-10 minutes until lightly golden and crisp. Set aside to cool.
  4. Place thawed frozen spinach in a clean kitchen towel and squeeze tightly to remove all excess water. The spinach should be very dry.
  5. In a large mixing bowl, beat together softened cream cheese and sour cream until smooth and fluffy. Add minced garlic, onion powder, black pepper, and red pepper flakes (if using). Mix until combined.
  6. Fold in the squeezed-dry spinach, chopped water chestnuts, shredded mozzarella, and grated Parmesan. Stir until completely uniform. Taste and adjust seasoning if needed.
  7. Spoon the dip mixture into the hollowed-out bread bowl, mounding it slightly above the rim. Place filled bread bowl on a baking sheet or cast iron skillet.
  8. Bake for 25-30 minutes, until the dip is hot and bubbly and the cheese on top is melted and golden brown. If the bread edges brown too quickly, tent loosely with aluminum foil.
  9. Remove from oven and carefully push the pretzel rod into the center of the dip, leaving about half sticking out to resemble a broomstick.
  10. Arrange toasted bread pieces and the bread lid around the cauldron on a serving board. Garnish with fresh herbs if desired. Serve immediately while hot.

Notes

Squeeze spinach extremely dry to prevent soggy dip. For a sturdier bread bowl, toast the hollowed loaf for 5 minutes before filling. Can be assembled up to 24 hours in advance and refrigerated; add 5-10 minutes to baking time if starting cold. Leftover dip can be stored separately in an airtight container for up to 3 days.
