Creamy Slow Cooker Beef Stroganoff

A cozy, creamy beef stroganoff made effortlessly in the slow cooker with tender beef strips, mushrooms, and a rich tangy sauce perfect for chilly evenings.

  • 2 pounds beef chuck or stew meat, cut into bite-sized strips
  • 8 ounces cremini or white button mushrooms, sliced
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low sodium beef broth
  • 1 cup full fat sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat 1 tablespoon of butter in a large skillet over medium-high heat. Brown the beef strips in batches for 5-7 minutes per batch. Transfer browned beef to the slow cooker.
  2. In the same skillet, add remaining butter. SautΓ© chopped onions and garlic for 3-4 minutes until softened and fragrant. Add sliced mushrooms and cook for another 5 minutes until mushrooms release moisture and start to brown. Transfer mixture to the slow cooker.
  3. In a bowl, whisk together beef broth, Dijon mustard, Worcestershire sauce, and flour until smooth. Pour over beef and vegetables in the slow cooker and stir gently to combine.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until beef is tender and sauce thickened. Avoid lifting the lid frequently.
  5. About 15 minutes before serving, stir in sour cream until smooth. Add salt and pepper to taste. If sauce is too thick, add a splash more beef broth to loosen.
  6. Garnish with chopped fresh parsley and serve over buttered egg noodles, mashed potatoes, or cauliflower rice.

Notes

Brown beef in batches to develop flavor and avoid steaming. Add sour cream off heat near the end to prevent curdling. Use gluten-free flour or cornstarch for a gluten-free version. If sauce is too thick after cooking, add a splash of beef broth to loosen. For a lighter version, substitute sour cream with Greek yogurt added off heat.
