These creamy peanut butter banana overnight oats are a quick, no-cook breakfast that tastes like dessert. Mashed banana creates a naturally sweet, pudding-like texture, while peanut butter swirls through every bite for a satisfying start to your day.

Ingredients

Scale
  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) milk (dairy, almond, oat, or coconut)
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds
  • Pinch of salt
  • Optional: dark chocolate chips, cinnamon, crushed peanuts

Instructions

  1. Mash half of the banana in a jar or small bowl with a fork until mostly smooth with a few small lumps.
  2. Add the milk, Greek yogurt, and maple syrup (if using). Stir until the banana is fully incorporated.
  3. Add the rolled oats, chia seeds, and a pinch of salt. Stir until evenly combined.
  4. Spoon the peanut butter on top and gently swirl it in with a knife or spoon, leaving ribbons of peanut butter.
  5. Seal the jar and refrigerate for at least 6 hours or overnight.
  6. In the morning, stir the oats. If too thick, add a splash of milk to reach desired consistency.
  7. Top with sliced remaining banana, a drizzle of peanut butter, and optional toppings. Serve cold or microwave for 30-45 seconds for warm oats.

Notes

Don’t skip the chia seeds—they are key for creamy texture. For best results, use a very ripe banana with brown spots. If making multiple jars, leave toppings off until ready to eat. The oats taste even better on day two.
