  • 1 cup (240ml) milk of choice (whole milk, oat milk, almond milk, or coconut milk)
  • 1/4 cup (64g) creamy peanut butter
  • 1 large ripe banana (spotty and soft)
  • 12 tablespoons (15-30ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon (2.5ml) vanilla extract (optional)
  • Pinch of salt
  • For topping (optional): sliced banana, drizzle of peanut butter, chopped peanuts or almonds, sprinkle of cinnamon, dark chocolate chips

Instructions

  1. Mash the banana: In a small bowl, mash half of the ripe banana with a fork until mostly smooth with a few small chunks. Set aside. Slice the remaining half for topping later.
  2. Mix the wet ingredients: In your jar or container, combine the mashed banana, peanut butter, milk, maple syrup (or honey), and vanilla extract. Whisk or stir vigorously until the peanut butter is fully incorporated (about 30 seconds).
  3. Add the dry ingredients: Pour in the rolled oats, chia seeds (if using), and a tiny pinch of salt. Stir until everything is evenly combined. The mixture should look slightly soupy.
  4. Seal and refrigerate: Put the lid on your jar and place it in the refrigerator. Let it sit for at least 8 hours, but 12-24 hours is even better.
  5. Serve and top: In the morning, take the jar out of the fridge. Give it a good stir. If too thick, add a splash of milk and stir. Top with sliced banana, a drizzle of peanut butter, chopped nuts, and a sprinkle of cinnamon. Enjoy cold, or microwave for 30-60 seconds if you prefer warm oats.

Notes

Mash the banana directly into the mixture for ultra-creamy texture. Stir before serving. If oats are too thick, add a splash of milk. For best texture, eat within 2-3 days. The flavors get better after 24 hours.
