A quick and easy overnight oats recipe that’s creamy, naturally sweetened with banana, and packed with protein and fiber. Perfect for busy mornings—just mix, refrigerate, and grab-and-go.

  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) milk (whole, 2%, or dairy-free)
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Mash half of the banana in a jar or small bowl until mostly smooth with a few small lumps.
  2. Add milk, Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract (if using). Stir until smooth and creamy.
  3. Add rolled oats, chia seeds (if using), and a pinch of salt. Stir until evenly combined.
  4. Seal the jar and refrigerate for at least 4 hours, preferably 8 to 12 hours overnight.
  5. The next morning, stir the oats. If too thick, add a splash of milk.
  6. Slice the remaining half banana and arrange on top. Drizzle with extra peanut butter if desired.

Notes

For best texture, use rolled oats (not quick oats). Mash banana well to avoid slimy chunks. Let sit at least 8 hours for optimal creaminess. Stir before eating. Can be microwaved 30-45 seconds if preferred warm. Store in fridge up to 4 days.
