A quick, no-cook breakfast recipe featuring old-fashioned oats soaked in almond milk and chia seeds, topped with creamy peanut butter and ripe bananas for a comforting, nutrient-dense start to your day.

  • 1 cup old-fashioned rolled oats
  • 1 tablespoon chia seeds
  • 1 cup unsweetened almond milk
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons natural peanut butter
  • 1 medium ripe banana
  • 1 teaspoon maple syrup (optional)
  • 1/2 teaspoon cinnamon
  • a pinch of salt

Instructions

  1. In a mason jar, add the rolled oats and chia seeds.
  2. Pour in the almond milk and Greek yogurt. Add maple syrup if using.
  3. Mix thoroughly with a spoon until there are no visible dry patches and chia seeds are dispersed.
  4. Drop spoonfuls of peanut butter on top. Stir in completely for uniform flavor or leave in swirls for pockets of taste.
  5. Seal the jar with a lid and refrigerate for at least 4 hours, ideally overnight (8-12 hours).
  6. In the morning, slice the banana and arrange it on top of the oats.
  7. Give it a final stir to combine the topping with the base and serve cold.

Notes

Use old-fashioned rolled oats, not instant or steel-cut, for the best texture. Natural peanut butter is recommended for better flavor. If oats are too thick in the morning, add a splash of milk. Can be stored in the fridge for up to 5 days or frozen for up to 1 month.
