A quick and easy one-pot creamy chicken pasta with sun-dried tomatoes, perfect for busy weeknights or dinner parties. This comforting dish combines tender chicken, a rich creamy sauce, and pasta cooked right in the sauce for maximum flavor.

  • 2 large boneless, skinless chicken breasts (about 1 lb / 450 g), trimmed and sliced into strips
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped (packed in oil preferred)
  • 2 ½ cups chicken broth (preferably low sodium)
  • 1 cup heavy cream (or half & half for a lighter option)
  • 8 oz penne or rigatoni pasta (use gluten-free pasta if needed)
  • ¾ cup freshly grated Parmesan cheese
  • ¼ teaspoon red pepper flakes (optional)
  • A handful fresh basil leaves, chopped (for garnish)
  • Salt and black pepper to taste

Instructions

  1. Pat the chicken strips dry with paper towels and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat for 3-4 minutes.
  2. Add chicken strips in one layer and cook undisturbed for 3-4 minutes until golden on the bottom. Flip and cook another 2-3 minutes until nearly cooked through. Remove chicken from pan and set aside.
  3. Lower heat to medium. Add minced garlic and sun-dried tomatoes to the skillet. Stir constantly for about 1 minute until fragrant but not burnt.
  4. Pour in chicken broth and heavy cream. Stir to combine and scrape up any browned bits from the pan bottom.
  5. Add uncooked pasta to the skillet. Stir to submerge pasta in liquid. Cover with a lid and bring to a gentle simmer. Cook for 12-15 minutes, stirring occasionally to prevent sticking, until pasta is tender but al dente.
  6. When pasta is almost done, return chicken to the skillet. Stir in grated Parmesan cheese and red pepper flakes if using. Cook uncovered for another 2-3 minutes to thicken the sauce and warm the chicken through.
  7. Taste and adjust salt and pepper as needed. Sprinkle chopped fresh basil over the top before serving.

Notes

If the sauce gets too thick, add a splash more broth or cream to loosen it. Do not rush the simmering to maintain a luscious texture. Brown chicken in batches if needed to avoid steaming. Use fresh garlic and freshly grated Parmesan for best flavor. Keep heat moderate to prevent breaking the cream or drying out the pasta. For dairy-free, substitute heavy cream with canned coconut milk and Parmesan with nutritional yeast.
