  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes (packed in oil), drained
  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup freshly grated Parmesan cheese
  • A handful of fresh basil, chopped
  • Salt and black pepper to taste
  • 1 tablespoon olive oil (for searing)

Instructions

  1. Pat chicken thighs dry and season generously with salt, pepper, and half of the Italian seasoning.
  2. Heat a large pot or Dutch oven over medium-high heat with olive oil. Sear chicken in batches for 3-4 minutes per side until golden brown. Remove and set aside.
  3. Reduce heat to medium. Add remaining butter, minced garlic, and sun-dried tomatoes to the pot. Sauté for 2 minutes until fragrant, scraping up browned bits.
  4. Pour in chicken broth and simmer for 2 minutes to reduce slightly. Stir in heavy cream and red pepper flakes; warm through without boiling.
  5. Return chicken and juices to the pot. Reduce heat to low, cover, and simmer for 5-7 minutes until chicken reaches 165°F.
  6. Stir in Parmesan cheese until melted. Adjust seasoning with salt and pepper.
  7. Turn off heat and stir in fresh basil. Let sit for 1 minute before serving.

Notes

Do not boil the cream after adding it to prevent separation. Searing the chicken is crucial for flavor depth. If the sauce is too thick, add a splash of broth; if too thin, simmer uncovered. For a dairy-free option, swap heavy cream for cashew cream.
