Ingredients

Scale
  • 1 cup (240g) full-fat cottage cheese (recommend Good Culture or Daisy brand)
  • 2 tablespoons (30g) plain Greek yogurt (optional)
  • ½ cup (75g) fresh berries (strawberries, blueberries, raspberries, or mix)
  • ½ medium banana, sliced
  • 2 tablespoons chopped nuts (almonds, walnuts, or pecans)
  • 1 tablespoon seeds (chia, hemp, or flax seeds)
  • 12 teaspoons honey or maple syrup
  • Optional: cinnamon, pinch of sea salt, nut butter, dark chocolate chips

Instructions

  1. Scoop 1 cup (240g) cottage cheese into a bowl. Stir gently to break up large curds if desired.
  2. Add 2 tablespoons (30g) Greek yogurt (if using) and stir until just combined.
  3. Wash and dry berries. Slice banana into thin rounds or half-moons. Dice larger fruit if using.
  4. Optional: Toast nuts or seeds in a small skillet over medium heat for 2-3 minutes until fragrant and lightly golden. Remove from heat and let cool.
  5. Arrange fruit on top of the cottage cheese mixture. Sprinkle toasted nuts and seeds over everything. Drizzle with honey or maple syrup.
  6. Add final touches: cinnamon, sea salt, or other extras. If using nut butter, dollop on top or swirl through.
  7. Eat immediately for best texture and freshness.

Notes

For extra creaminess, let cottage cheese sit at room temperature for 5 minutes before assembling. Drain excess liquid from cottage cheese if watery. Add a pinch of flaky sea salt to enhance sweetness. Prep fruit and nuts the night before for faster assembly.
