Instructions

  1. Prep your chicken: If using rotisserie chicken, remove skin and shred meat into bite-sized pieces. If cooking from scratch, season two boneless skinless chicken breasts with salt and pepper, bake at 375°F (190°C) for 20-25 minutes until internal temp reaches 165°F (74°C), let rest 5 minutes, then shred. You should have about 3 cups.
  2. Toast almonds (optional but recommended): Heat a small skillet over medium heat. Add sliced almonds and cook for 2-3 minutes, shaking frequently, until golden and fragrant. Pour onto a plate to cool.
  3. Prep produce: Wash and dry grapes, celery, and green onions. Halve grapes lengthwise. Dice celery into ¼-inch pieces. Thinly slice green onions (white and green parts). Chop fresh dill or parsley.
  4. Make dressing: In a large mixing bowl, combine Greek yogurt, Dijon mustard, lemon juice, and honey. Whisk until smooth. Taste and adjust seasoning if needed.
  5. Combine everything: Add shredded chicken, halved grapes, diced celery, toasted almonds, green onions, and chopped herbs to the bowl with dressing. Fold gently with a rubber spatula until everything is evenly coated. Do not overmix.
  6. Season and adjust: Taste and add more salt and pepper as needed. If too dry, add another tablespoon of yogurt. If too tangy, add a bit more honey.
