  • 1 cup plain Greek yogurt (2% or full-fat)
  • 4 oz reduced-fat cream cheese, softened
  • 1/2 cup buffalo sauce (e.g., Frank’s RedHot Original)
  • 1 cup shredded sharp cheddar cheese, divided
  • 1 tablespoon ranch seasoning mix
  • 23 green onions, sliced (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Soften cream cheese if needed.
  2. Shred or dice cooked chicken to yield about 2 cups.
  3. In a medium bowl, beat softened cream cheese until smooth. Add Greek yogurt and beat until combined.
  4. Stir in buffalo sauce and ranch seasoning. Adjust heat to taste.
  5. Fold in shredded chicken and 3/4 cup cheddar cheese until evenly distributed.
  6. Transfer mixture to an 8×8 baking dish and spread evenly. Top with remaining 1/4 cup cheddar cheese.
  7. Bake for 18-22 minutes, until bubbly around edges and top is lightly golden. Optionally broil 1-2 minutes for a browner top.
  8. Let rest 5 minutes before serving. Garnish with sliced green onions and serve warm.

Notes

For best texture, use 2% or full-fat Greek yogurt and block cheese shredded yourself. Soften cream cheese completely to avoid lumps. Dip can be assembled a day ahead and refrigerated; add a few extra minutes to baking time if starting from cold. Leftovers keep in the fridge for up to 4 days or freeze unbaked for up to 3 months.
