A quick and easy creamy hummus featuring fresh garlic scapes, chickpeas, tahini, and a silky olive oil drizzle, perfect for snacks or entertaining.

  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed
  • 45 garlic scape stalks, chopped
  • 3 tbsp tahini
  • 3 tbsp extra virgin olive oil, plus extra for drizzle
  • 2 tbsp fresh lemon juice
  • 34 tbsp water, or as needed
  • 1/2 tsp ground cumin
  • 1/2 tsp salt, or to taste
  • Pinch of freshly ground black pepper

Instructions

  1. Rinse 4-5 fresh garlic scapes and chop into 1-inch pieces.
  2. Drain and rinse the chickpeas under cold water.
  3. Place chickpeas, garlic scapes, tahini, olive oil, lemon juice, ground cumin, salt, and black pepper into a food processor.
  4. Pulse the mixture 5-6 times to break down ingredients evenly.
  5. Blend continuously for 1-2 minutes, scraping down the sides as needed until creamy and smooth.
  6. Slowly add 3-4 tbsp water while blending to reach desired consistency.
  7. Taste and adjust seasoning with more salt, lemon juice, or cumin if needed.
  8. Transfer hummus to a shallow serving bowl and drizzle with extra olive oil before serving.

Notes

If garlic scapes are unavailable, substitute with scallion whites or young green garlic, reducing quantity to avoid overpowering. For nut-free version, replace tahini with sunflower seed butter. Avoid over-blending to prevent bitterness. Add water tablespoon by tablespoon to adjust consistency. Refrigerate leftovers up to 5 days; bring to room temperature before serving. Do not microwave.
