  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 4 tablespoons unsalted butter
  • 6–8 cloves fresh garlic, minced
  • 3 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 12 ounces fettuccine or linguine
  • 1 cup freshly grated Parmesan cheese, plus more for serving
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • Fresh parsley for garnish

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt, pepper, and garlic powder. Let sit at room temperature for about 10 minutes.
  2. Place a large Dutch oven over medium-high heat and add 2 tablespoons of butter. Once melted and sizzling, add the chicken thighs in a single layer. Cook for 4-5 minutes per side until golden brown. Transfer chicken to a plate and set aside.
  3. Reduce heat to medium. Add remaining 2 tablespoons of butter. Once melted, add minced garlic and red pepper flakes (if using). Stir constantly for about 30 seconds until fragrant.
  4. Slowly pour in the chicken broth while scraping the bottom of the pot with a wooden spoon. Let the broth come to a gentle simmer.
  5. Stir in the heavy cream and dried Italian seasoning. Add the fettuccine, breaking it in half if needed to fit. Ensure pasta is mostly submerged.
  6. Bring to a gentle boil, then reduce heat to medium-low. Cover and simmer for 10-12 minutes, stirring occasionally, until pasta is al dente and most liquid is absorbed.
  7. While pasta cooks, shred or dice the seared chicken into bite-sized pieces. Once pasta is done, return chicken to the pot along with any accumulated juices. Cook for another 2-3 minutes until chicken is heated through.
  8. Remove pot from heat. Sprinkle in grated Parmesan cheese and stir until melted and smooth. Taste and adjust seasoning with salt and pepper if needed.
  9. Let pasta sit for 2-3 minutes before serving. Garnish with fresh parsley and extra Parmesan. Serve immediately.

Notes

For best results, use freshly grated Parmesan and don’t rush the sear. If sauce is too thin, let sit covered for 5 minutes; if too thick, add a splash of warm broth. Leftovers keep in the refrigerator for up to 4 days and freeze well for up to 3 months.
