A rich, velvety slow-cooker chili made with chicken, white beans, cream cheese, and green chiles. This easy, 4-ingredient style meal is perfect for busy weeknights and offers a comforting, dairy-rich texture without the need for complex techniques.

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cans (15 oz each) Great Northern beans or cannellini beans, rinsed and drained
  • 1 can (4 oz) diced green chiles
  • 32 oz low-sodium chicken broth
  • 8 oz full-fat cream cheese, cubed
  • 1 cup full-fat sour cream
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 cup frozen corn kernels
  • Salt and pepper to taste

Instructions

  1. Dice the onion and mince the garlic. Cut chicken breasts into 2-inch cubes.
  2. Place onion and garlic at the bottom of a 6-quart slow cooker.
  3. Add chicken broth, green chiles, drained beans, cumin, and chili powder. Stir to combine.
  4. Place chicken chunks on top of the bean mixture.
  5. Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours until chicken is fork-tender.
  6. Remove chicken, shred with two forks, and return to the pot.
  7. Add cubed cream cheese, cover, and let sit for 5-10 minutes until softened.
  8. Stir gently until cream cheese is completely melted and incorporated.
  9. Stir in frozen corn and sour cream. Taste and adjust seasoning with salt and pepper.
  10. Serve immediately, topped with optional garnishes like shredded cheese or cilantro.

Notes

For best texture, do not skip the cream cheese or use light versions as they may not melt properly. If using rotisserie chicken, add it in the last 30 minutes of cooking. The chili thickens upon standing; add a splash of broth when reheating if desired. Corn should be added at the end to maintain crunch.
