An easy, 5-ingredient slow cooker mashed potato recipe that uses cream cheese for a rich, tangy, and velvety texture without the hassle of stovetop stirring.

  • 3–4 lbs Russet potatoes, peeled and cut into 1-inch cubes
  • 8 oz full-fat cream cheese, cut into cubes
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup low-sodium chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • Optional: Chopped chives, fresh parsley, or crispy bacon bits for garnish

Instructions

  1. Peel the russet potatoes and rinse under cold water to remove starch. Chop into uniform 1-inch cubes and place in a bowl of cold water while prepping other ingredients.
  2. Drain the potatoes thoroughly to ensure they are as dry as possible.
  3. Place the drained potatoes and chicken broth into a 4-6 quart slow cooker. Stir gently to distribute the liquid.
  4. Cover and cook on HIGH for 3-4 hours, or until potatoes are extremely tender and slide off easily with a fork.
  5. Once tender, remove the lid. If there is excess liquid, cook uncovered for 10 minutes to evaporate. Let the potatoes sit for 2 minutes to start melting the dairy.
  6. Add the cubed cream cheese and softened butter to the hot potatoes.
  7. Sprinkle salt, pepper, and garlic powder over the top.
  8. Mash the potatoes against the side of the pot, then stir vigorously with a spatula or wooden spoon until the cream cheese and butter are fully incorporated and the mixture is smooth and glossy.
  9. Taste and adjust seasoning. If too thick, add a splash of broth; if too thin, let sit on ‘Warm’ for 15 minutes.
  10. Serve immediately, topped with optional garnishes like chives or bacon.
