A comforting, easy-to-make soup that captures the flavors of traditional lasagna in a slow-cooker format. Perfect for busy weeknights, this dish combines ground beef, ricotta, mozzarella, and broken noodles in a rich marinara broth.

  • 1 pound (450g) ground beef (80/20 fat content preferred)
  • ½ pound (225g) Italian sausage (mild or hot)
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 24–26 oz jar marinara sauce
  • 2 cups (480ml) beef broth (low sodium)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt (plus more to taste)
  • Black pepper to taste
  • 15 oz container ricotta cheese (whole milk)
  • 2 cups shredded mozzarella cheese (low-moisture part-skim)
  • ½ cup (120ml) heavy cream (optional)
  • 8–10 lasagna noodles, broken into pieces

Instructions

  1. Brown the ground beef and Italian sausage in a large skillet over medium-high heat for 8-10 minutes until no pink remains. Drain excess fat.
  2. In the same skillet, sauté the diced onion in a little olive oil until translucent (about 3 minutes). Add minced garlic and cook for 30 seconds until fragrant.
  3. Transfer the meat and onion mixture to a 6-quart slow cooker. Add marinara sauce, beef broth, Italian seasoning, salt, and pepper. Stir to combine.
  4. Break lasagna noodles into 2-inch pieces and add them to the slow cooker. Stir gently to submerge noodles in the liquid.
  5. Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours until noodles are tender.
  6. While the soup cooks, whisk ricotta cheese, half of the mozzarella, and heavy cream (if using) in a medium bowl until smooth.
  7. Once noodles are cooked, turn the slow cooker to WARM. Stir in the cheese mixture until melted and creamy. Adjust seasoning with salt and pepper.
  8. Top with remaining mozzarella if desired and serve hot.
