  • 2 tablespoons unsalted butter
  • 1 medium yellow onion (diced)
  • 3 cloves fresh garlic (minced)
  • 4 cups low-sodium chicken or vegetable broth
  • 1/2 cup heavy cream or half-and-half
  • 2 cups freshly shredded sharp cheddar cheese
  • Salt and black pepper to taste
  • 1 pinch nutmeg
  • Optional: Cayenne pepper for heat

Instructions

  1. Prep the vegetables by washing and chopping broccoli florets into bite-sized pieces. Dice the onion and mince the garlic.
  2. In a small pan over medium heat, melt the butter. Sauté the diced onion until soft and translucent (about 5 minutes). Add the garlic in the last minute to prevent burning.
  3. Transfer the sautéed onions and garlic to a 6-quart slow cooker. Add the broccoli florets, broth, salt, pepper, and nutmeg. Ensure the broccoli is covered by liquid.
  4. Cover and cook on Low for 4-5 hours or High for 2-3 hours, until the broccoli is tender.
  5. For a creamier texture, use an immersion blender to puree about half of the soup. Alternatively, mash some florets against the side of the pot.
  6. Stir in the heavy cream or half-and-half. Switch the slow cooker to ‘Keep Warm’ to prevent boiling.
  7. Gradually add the shredded cheddar cheese in batches, stirring constantly until melted and smooth. Avoid high heat to prevent separation.
  8. Taste and adjust seasoning with additional salt and pepper if needed. A squeeze of lemon juice can brighten the flavor.
  9. Serve immediately, topped with extra cheese, bacon bits, or chives if desired.

Notes

Do not use pre-shredded cheese as it contains anti-caking agents that prevent smooth melting. Use block cheese and shred it yourself. If the soup is too thin, mash some broccoli or use a cornstarch slurry. For freezing, freeze the base without dairy, then add fresh cheese and cream upon reheating.
